Cookie Ice Cream Towers

This past weekend I cooked up several batches of Florentine ice cream cookie towers. Let me tell ya, these bad boys burn right quick if you don’t keep on top of them. As they cool there’s a small window of perhaps 45 seconds where the shells are cool enough to cut yet warm enough to shape over wine bottles.
I’ve never done any sugar work before, and now have a new appreciation for people who work with the stuff. I managed to shatter a batch by not being quick enough getting them on the wine bottle forms.
I apologize for the lousy photo. This was the last of the towers, and this picture was taken at midnight and I was anxious to dig into it!
